A driftwood-clad dune shack south of Rantum that has become Sylt's most famous restaurant

Sansibar started out in 1978 as a beach shack in the dunes south of Rantum selling sausages and beer, and over four decades has somehow turned into the most famous restaurant on the German coast — without ever really changing what it is. The building is still a low driftwood-clad structure half-buried in the sand; the menu still leans on fish, currywurst, and Pannfisch (pan-fried fish with potatoes); the wine list now runs to several hundred labels.

Booking is essentially compulsory in summer — try months ahead. The shop and online catalogue sell the famous Sansibar logo merchandise, an income stream that probably keeps the kitchen afloat. Drive south from Rantum along the beach road or arrive on foot through the dunes.
