The Grotta Giusti hotel's restaurant is the most polished kitchen in Monsummano: Tuscan cooking — pici with wild boar, Chianina beef, ricotta and spinach tortelli — served in a glass-walled dining room overlooking the spa gardens. Non-residents are welcome to book lunch or dinner.
It is not cheap (mains around €25 and up), but the cooking is dependable and the setting calm. A reasonable pairing with a day at the cave; reserve in advance, especially on weekends.
