The classic Pisan street-food joint, tucked into a small piazza between Borgo Stretto and the river. The thing to order is cecìna — a thin pancake of chickpea flour baked in a copper pan — folded into a slice of focaccia with a sprinkle of salt. Five euros, eaten standing or perched on the bench outside.
Also good for slices of square Roman-style pizza by weight and the local sandwich (pizza ripiena) stuffed with mortadella or sausage. No reservations, no fuss. Pay at the counter and join the queue with the students. Closes for the summer holidays in August.
