Two minutes from Piazza dei Cavalieri, this is the place Pisans take guests when they want to be quietly proud of the city's cooking. A small wood-panelled room with closely packed tables, a sensible Tuscan menu (the wild boar pappardelle, the bistecca alla fiorentina, a perfect ribollita in winter), and an enthusiastic regional wine list at fair prices.
Book ahead — it is small and popular with the Scuola Normale crowd. Lunch is a few euros cheaper than dinner. Mains around €18–€25, the bistecca priced by weight.
