Il Tufo Allegro

Il Tufo Allegro is the most highly regarded restaurant in Pitigliano, set in a cave-like room carved into the tuff at the base of the old town. The cooking draws on Maremma traditions with some refinement — expect dishes like wild boar with Morellino di Scansano, hand-rolled pasta with truffle, and local lamb prepared simply with rosemary and olive oil.

The room itself is memorable: rough stone walls, low vaulting, candles. In summer there is a small terrace outside. Booking ahead is strongly recommended; it is popular with visitors who have made the journey specifically and fills quickly in the evening.
