Volterra's best-known fine-dining restaurant, in the 16th-century Palazzo Giunti just off Piazza dei Priori. The dining rooms are vaulted stone with white tablecloths; the small back garden is delightful in summer. Chef Genuino Del Duca's menu sticks close to inland Tuscan traditions — fresh pasta with hare ragù, suckling pig with chestnut, truffles in season — but the execution is precise and the wine list (over 700 labels) is one of the best in the area.
Booking essential. Mid-to-upper price range, but excellent value for the quality. Closed Tuesdays.
