Venice has a strong bar culture that predates tourism — the bacaro, a small wine bar serving cicchetti (small snacks), is a Venetian institution. The best ones are around the Rialto market in San Polo and around Campo Santa Margherita in Dorsoduro, which is the closest thing Venice has to a genuine neighbourhood nightlife scene. Avoid the bars on Piazza San Marco unless you want to pay six euros for an espresso.
