Kybynlar

Kybynlar is the name most associated with Karaim food in Trakai, a restaurant on Karaimu Street in a traditional Karaim wooden house. The menu is built around kibinai in their authentic form — the mutton-filled version is the traditional recipe, the filling spiced with onions and black pepper, baked until the pastry is golden and crisp. The restaurant also serves Karaim-style soups and some Lithuanian dishes.

The setting is part of the experience: the wooden interior, the low ceilings, the views onto Karaimu Street through small windows. The service can be slow when it fills up in summer, but there is nowhere else in the world to eat genuine Karaim food in its historic setting. Order the mutton kibinai with a bowl of their clear broth, and don't skip the dessert pastries.
