IJmuiden is the largest fishing port in the Netherlands, and the local fish is the reason to eat here. Fresh herring — raw, salted, eaten with or without chopped onion and gherkin — is the local speciality and can be bought from stands at the fish market or from the boats themselves on the quay. The fish auction happens early in the morning, before most visitors arrive, but the fish market remains active throughout the day.
