Maaemo is Norway's most celebrated restaurant — three Michelin stars, a Nordic tasting menu focused entirely on Norwegian ingredients, and a reservation list measured in months. The name means "Mother Earth" in Old Norse. Chef Esben Holmboe Bang has built the menu around foraged, farmed, and fished Norwegian produce: cloudberries, reindeer, Norwegian lamb, sea urchin from the west coast, wild herbs from the Hardangerfjord. The wine pairing is particularly strong on natural and biodynamic wines.

For most visitors this is an aspirational rather than practical suggestion — the cost is significant and the reservations scarce. But for those with the budget and the planning horizon, it is one of the world's genuinely interesting restaurants: a serious statement about what Nordic food can be when treated as seriously as French or Japanese cuisine.
