Sighetu Marmației is the largest town in the region and the place most likely to be useful if you are passing through rather than staying in a village, or if you arrive late and the guesthouses have already served dinner. The town has a handful of restaurants around Piața Libertății (the main square) and on the streets leading off it.
The better options lean towards traditional Romanian cooking: soups, grilled meats, mămăligă, sarmale (stuffed cabbage rolls). A few places also offer Hungarian dishes, reflecting the mixed history of a town that was part of the Austro-Hungarian empire and still has a significant Hungarian-speaking population. Prices throughout are low by Western European standards.
For coffee and a quick lunch, the cafes around the central square are adequate. The town also has a covered market where you can buy local produce, including the smoked cheeses and meats that are the region's best food product. The market is busiest on weekday mornings.
