Santander's food scene centres on the old fishing port and the streets around the Mercado de la Esperanza. Seafood dominates: anchovies cured in vinegar (boquerones), rabas (deep-fried squid rings), and fresh percebes (barnacles) are the local standards. The city has a serious pintxos culture inherited from its Basque neighbours — bar-hop along Calle Daoiz y Velarde for the best offerings.
