The restaurant of the Posada de San José hotel offers some of the best views in Cuenca — the terrace hangs over the Huécar gorge with the rock face directly below. The menu leans traditional: ajoarriero (a salted-cod and garlic paste typical of Cuenca), cuchifrito (fried suckling pig), and seasonal truffle dishes in winter. The setting alone justifies the visit, but the cooking holds its own. Dinner reservations recommended.
