Cuenca's cuisine is rooted in the inland Castilian tradition: game from the Serranía forests, truffles, lamb, and the distinctive morteruelo — a thick, spiced game pâté eaten on toast that you'll find almost everywhere. Zarajos (coiled lamb intestines, grilled) are the other local speciality, acquired taste but worth trying. Restaurants cluster around the Plaza Mayor and along Calle Cervantes in the new town; the old city has fewer options but more atmosphere.
