El Bulli 1846

The original El Bulli kitchen and dining room at Cala Montjoi reopened in 2023 as a museum and archive of the work of Ferran Adrià, one of the most influential chefs of the modern era. The visit walks through the history of the restaurant, the techniques the kitchen pioneered (spherification, foams, deconstructions), and the broader notion of cuisine as creative practice.

It is not a place to eat. The visit is timed and limited, with tickets booked weeks ahead through the website. Worth it for anyone with a serious interest in food; less so for the casual visitor. A shuttle service runs from Roses on opening days.

A story
El Bulli closed in 2011 at the height of its fame, when chef Ferran Adrià declared that he wanted to convert it from a restaurant into a creative laboratory. The 1846 in the name refers to the number of dishes the restaurant served over its lifetime — every single one catalogued.
