Buñol's sights split neatly between the old town and the river. Start with the castle and the lanes below it, then walk west toward San Luis Park. If the weather is warm, continue to Cueva Turche for the swimming hole and waterfall.
La Tomatina is the exception to the town's normal rhythm. On festival day, Buñol is not a quiet hill town at all, but a crowded, ticketed tomato fight that draws visitors from far beyond Spain.
