Eating Out

Gotland has a serious local food culture built around lamb, fish, and foraged produce from the island's meadows and limestone plateau. Gotland lamb — gute lamb, from the old Norse breed — is the signature meat: leaner and more flavourful than mainland varieties, roasted simply and served with local root vegetables. Saffron pancake (saffranspannkaka) is the classic Gotlandic dessert, served warm with cream and cloudberry jam, and found on nearly every traditional menu.

The best eating is concentrated in Visby, but several farm restaurants and rural producers across the island sell directly and are worth seeking out. The summer crowds drive up prices sharply; the island's restaurants are broadly more expensive than equivalent places in most Swedish cities.
