Hitchin's eating-out scene is small but well above its weight, fed by London commuters and weekend visitors. The independent end of the spectrum is strong: a couple of long-running Italian trattorias, a Spanish tapas bar in a converted chapel, an open-fire-grill restaurant in an old market hall, and a clutch of decent gastropubs in the back streets.
