Hitchin is best taken at a slow walk. The medieval centre is small enough to circle in an hour — the parish church, the market square, the Corn Exchange and a couple of museums — and the surrounding countryside (notably the lavender fields at Cadwell Farm in summer) is what gives the place its weekend pull.
