Pop's is the breakfast institution of San Ignacio — open from dawn, queueing out the door by 8am, and famous for its fry jacks: fluffy fried bread served with refried beans, cheese, and a runny egg. The room is small and cheerful, the prices very low, and the regulars include tour guides loading up before the day's run to Caracol.
Pancakes and omelettes are the other reliable orders. Cash only, Belize dollars preferred. Open 6am to 2pm; closed Mondays.
