Eating Out

Tehuacan has a solid local food culture. The regional specialty is cecina — thin sheets of beef or pork, dried and salted in a style particular to the Tehuacan-Oaxaca region, often served with tasajo and chorizo in a mixed platter. Memelas (thick maize flatbreads with toppings) and pipián rojo (pumpkin-seed mole) are the other dishes worth seeking. The covered market near the zócalo is the best place for cheap, authentic food.
