Maui's food scene has grown far beyond resort buffets. Pāʻia and Kihei have genuine neighbourhood restaurants; the upcountry produces excellent produce and cattle; and the fish — ahi tuna, mahi-mahi, opakapaka — is as fresh as it gets. Fish tacos are the default casual meal and remarkably consistent across the island.
