Herbs & Rye opened in 2009 and is widely credited with launching the serious cocktail movement in Las Vegas. The menu is organised by era — pre-Prohibition, Prohibition, post-war — and every drink is built with the same obsessive attention to ice, glassware, dilution, and balance that defines the best American cocktail bars.

Owner Nectaly Mendoza built his reputation here, and the bar remains the standard against which Las Vegas cocktails are measured. The food menu — charcuterie, small plates, a kitchen that runs late — is good enough to make it a dinner destination as well. Open until 4am seven nights a week. Located off-Strip on Sahara, so a rideshare rather than a walk, but absolutely worth it.
