Prince's Hot Chicken Shack

The originating hot chicken restaurant in Nashville, run by the same family since the 1930s. Spice levels run from Mild to XXX Hot — XXX is no joke and is served with a small pile of plain white bread to absorb the heat. The cayenne-and-lard paste used to coat the chicken is so hot at the top end of the menu that the kitchen prepares it in a separate area; staff sometimes wear gloves.

The original Ewing Drive location burned in 2020 and reopened in 2023 in a larger building on Dickerson Pike. Queues are normal at weekends; orders take 30 minutes from scratch. Hattie B's (downtown and elsewhere) is the slicker, faster, less intense alternative — popular with visitors who don't want to wait at Prince's.

A story
Family lore traces hot chicken to the 1930s, when Thornton Prince's girlfriend, suspicious of his philandering, tried to punish him by coating his fried chicken in the hottest spice paste she could find. He liked it so much he started serving it at his cafe, and eventually opened Prince's. Five generations later the spice paste is still made to the same closely guarded recipe.
