Legendary roadside grill-turned-institution in Chía, north of Bogota

Andrés Carne de Res defies simple categorisation. What started as a roadside grill in the town of Chía, about 30 km north of Bogota, has become a Colombían institution — a multi-room carnival of a restaurant serving grilled meats, arepas, and everything else imaginable to crowds of hundreds, with live music, dancing, and an atmosphere that tips somewhere between restaurant, nightclub, and fever dream.

The food — giant cuts of grilled beef, chicharrón, blood sausage, and all the trimmings — is genuinely good and served in quantities that defy reason. Go hungry and plan to stay late. A taxi from the city takes about 40 minutes (longer on weekend nights when traffic backs up on the road north). There is also a city location in the Zona Rosa, but the Chía original is the real thing.
