Chef Leonor Espinosa runs what many consider the finest restaurant in Colombia, a place built entirely around the biodiversity of Colombian ingredients and the country's regional culinary traditions. The tasting menus change seasonally and explore the fermented, the smoked, the tropical, and the Andean — dishes you are unlikely to encounter anywhere else.

Espinosa and her daughter Laia have also run Funleo, a foundation supporting indigenous Colombian food producers, and the cooking here reflects that work directly.
