Astrid y Gastón, opened in 1994 by Gastón Acurio and his pastry-chef wife Astrid Gutsche, was the restaurant that essentially invented the modern, refined version of Peruvian cuisine — drawing together regional ingredients, French technique, and a sense of national pride that the Lima food scene had previously lacked. It has been a fixture of the World's 50 Best for nearly two decades.
Since 2014 it occupies a converted Casa Moreyra, a sprawling 17th-century San Isidro mansion with multiple dining rooms, garden tables, an open kitchen, and a separate tasting-menu room called "Pasión". The à la carte includes some of the dishes that made Acurio famous; the seasonal tasting menu changes regularly.
