Carnaval, in San Isidro, has been on the World's 50 Best Bars list every year since 2019 and topped the Latin American 50 Best more than once. Bartender Aaron Díaz builds the menu around Latin American ingredients — Peruvian pisco, Mexican mezcal, Brazilian cachaça — applied to highly technical reinterpretations of classic drinks, often presented theatrically (smoke, ice carvings, paired bites).
Reservations recommended; the bar holds about 50 and fills early on weekends. Drinks are around 45 soles, expensive by Lima standards but worth it. Among the more reliably exciting late evenings in San Isidro.
