As de Oros

As de Oros is one of the better-regarded seafood restaurants in central Pisco, reliable for the city's two signature dishes: ceviche and fried fish. The ceviche here is prepared in the local coastal style — white fish cured in lime, with thick-sliced onion, chilli, and a spoonful of creamy leche de tigre in the bowl. It's simple and good, and cheap by any measure.

The restaurant is a no-frills place on the streets near the plaza, busy at lunchtime with locals and the occasional traveller who has worked out that the best seafood in Peru is rarely found in the upmarket hotels. Order the ceviche mixto if you want a sampler, and pair it with a cold Cusqueña or a house-made chicha morada.
