Wuxi cuisine belongs to the Jiangnan tradition — sweet, subtle, and fish-forward — but with a distinct local tendency toward sweeter flavouring than either Shanghai or Suzhou. The city's most celebrated dish is Wuxi spareribs, braised until falling-off-the-bone tender in a sweet soy sauce. Hairy crab from Lake Tai is the prestige seasonal ingredient, available from September to December.
