Dalian is famous throughout China for its seafood. Sea urchin, abalone, scallops, sea cucumber, and a variety of clams and crabs are local specialities — the cold Yellow Sea waters produce excellent shellfish. The markets near the port and at Fujiazhuang are the best introduction: buy live seafood and take it to a nearby restaurant for cooking. Away from the coast, northeast Chinese cooking (dongbei cai) is hearty and satisfying, with dishes built around pork, pickled cabbage, and wheat-based staples.
