Pixian Douban (郫县豆瓣)

Pixian, now an urban district northwest of Chengdu, is the origin of doubanjiang — the fermented broad bean and chili paste that defines Sichuan cooking. Several factories in the area sell directly from their retail counters, and visiting the fermenting facilities is possible at some. The San Jiao Pai brand and Jia Zhou brand are both exported internationally; buying locally is significantly cheaper.

Pixian market also sells Sichuan peppercorn, dried chilies, and other Sichuan cooking ingredients at wholesale prices. For serious food shoppers, a half-day excursion to Pixian to stock up on authentic doubanjiang is genuinely worthwhile. Take a bus from Chengdu's Moziqiao terminal.

A story
Pixian doubanjiang — fermented broad bean and chili paste from Pixian county, 16 km north of Chengdu — has been produced for over 300 years. It is the foundational ingredient of Sichuan cooking, described by local cooks as "the soul of Sichuan cuisine." The paste ferments in large earthenware crocks for a minimum of 3 years; some premium grades ferment for 10 years or more. The paste is turned manually twice daily during fermentation. Factories in Pixian turn over hundreds of thousands of crocks at any time; on summer afternoons, the smell of fermenting chili permeates the entire district.
