Naan Qalia at Gulmandi

The cluster of old restaurants along the Gulmandi area — near the old market — is the canonical place to eat Aurangabad's signature dish: naan qalia. The mutton is slow-cooked overnight in a yoghurt and spice gravy until it falls off the bone, then served with fat, slightly charred tandoor naan. The restaurants here are no-frills and unlicensed (alcohol-free), which means the clientele is almost entirely local. Go for a late lunch, when the cooking has been going since before dawn. Budget around ₹250–350 for a full meal.
