Trio has been one of the most consistently recommended restaurants in Jaisalmer for many years, with a rooftop position near the Gandhi Chowk square and a direct view of the fort. The kitchen does a particularly good Rajasthani thali — a full spread of regional dishes including dal, sabji, kadhi, rice, roti, and sweets, which gives you a broad taste of local cooking in a single meal. The laal maas (a fiery Rajasthani mutton curry) is also good here, and rare for the old city, which tends toward vegetarian menus.
The atmosphere is more relaxed than some of the more aggressively tourist-oriented rooftops. Service is attentive without being pushy. Prices are reasonable for the quality. The restaurant also serves cold beer, which after a day walking in the desert is a serious advantage.
