Eskişehir's signature dish is çiğ börek — crisp half-moon pastries filled with spiced minced meat, deep-fried to order. It is a Tatar dish brought by Crimean refugees in the 19th century and is sold everywhere in town. Beyond çiğ börek, the student population has produced more variety than you would expect in a city of this size: a respectable kebab scene, several decent pide places, modern cafes around the Porsuk, and a number of cosy mezze restaurants in Odunpazarı.
