Tekirdağ Köfte Houses

Tekirdağ köfte are a specific style of grilled meatball — flatter and slightly wider than the Istanbul version, made from a mixture of beef and lamb with a characteristic spice blend that includes black pepper and a touch of cumin. They are grilled directly on charcoal and served with bread, raw onion, and tomato, sometimes with a side of pickled vegetables. The recipe is guarded jealously and the best versions are noticeably different from what you'll find in other Turkish cities.

The köfte tradition draws visitors from Istanbul on weekend trips. Several köfte restaurants cluster near the city centre and the main market street; the most established ones have been serving the same recipe for generations. Order the köfte, get a cold ayran to drink, and eat outside if the weather allows. That is the whole meal and it needs nothing else.
