Bún bò Huế — the spicy lemongrass-and-chilli beef noodle soup from the ancient capital Hue — is one of the great underrated dishes in Vietnamese cooking, richer and more complex than phở with its shrimp paste underpinning and thick round noodles. This stall near the Pham Ngu Lao backpacker area serves a version that regulars consider among the best in District 1.
