Phở Hòa on Pasteur Street has been serving phở bò (beef noodle soup) since 1960, surviving the change of regime and becoming one of the most consistently recommended pho restaurants in the city. The broth is clear, deeply flavoured, and arrives with a plate of fresh herbs, bean sprouts, lime, and chilli on the side.

A bowl costs around 65,000–80,000 đồng ($3–4). The restaurant is often crowded at breakfast and lunch. The service is abrupt and fast, which is correct — phở is not a meal for lingering. This is the real Saigon breakfast: a bowl of pho eaten standing up (or hunched over a low table) before 9AM.
