Eating on Bora Bora is expensive — everything is imported, French prices apply, and the resort hotels add their own considerable markup. Budget travellers eat in Vaitape at the small local snack bars and at the roulottes (food trucks) that appear at the waterfront in the evening. The local cuisine is French-Polynesian: fresh fish (mahi-mahi, parrotfish, tuna), poisson cru (raw fish marinated in lime and coconut milk, the national dish), and Chinese-influenced noodle dishes brought by the Chinese immigrant community that has been here since the 19th century.
