Valentino has no chairs. The arrangement is to collect your drink and find a spot on the flat limestone rocks below the bar, then sit on the rock and watch the sun set over the Adriatic. It sounds eccentric and has become extremely popular — by sunset there are dozens of people spread across the rocks — but the location is genuinely stunning and the ritual entirely worth doing once.
Cocktails are well made and imaginatively varied; there is also beer and wine. The bar is on the western shore of the old town peninsula, facing directly into the setting sun. Come 30 minutes before sunset to get a good position. The bar stays open until late for anyone who wants to switch from watching the sunset to watching the stars.
