Fish is the obvious choice in Skagen — the harbour lands serious quantities of plaice, sole, and the local speciality, Skagen-style prawns. The dish called Skagen (prawns, mayonnaise, dill, served on toast or in a brioche) was actually invented here and has become a national staple. Several restaurants on the harbour do good versions of it.
