Ma Cuisine occupies a peculiar niche in Beaune: it is not a grand restaurant, but it has one of the most serious wine lists in the region at markups closer to a wine shop than a restaurant. The food is good Burgundian cooking — terrine, poulet de Bresse, fromage blanc — but people come primarily for the cellar, which includes older vintages of Burgundy that are almost impossible to find on restaurant lists elsewhere at any price.
The owners know the local producers personally and stock wines from small domaines not found in tourist-oriented shops. If you are serious about Burgundy, eat here at least once. The room is small and booking ahead is essential.
