Haut-Languedoc market town in the Jaur valley, centred on an old Benedictine cathedral.

St-Pons-de-Thomières is the unofficial capital of the Parc Naturel Régional du Haut-Languedoc, a small town tucked into a wooded valley where the River Jaur passes through. The Cathédrale Saint-Pons, originally part of a Benedictine abbey founded in 936, dominates the centre with its mix of Romanesque and Gothic architecture. Inside, the carved marble heads on the choir stalls are worth a close look.

The Saturday morning market fills the main square with local producers selling mountain honey, charcuterie, goat cheese from the Lacaune hills, and seasonal fruit. It is one of those markets where you end up buying far more than you intended. The old town around the cathedral is compact and pleasant to walk, with stone houses and a couple of good cafes.

St-Pons makes an excellent base for exploring the Haut-Languedoc park. The Gorges d'Héric, about twenty minutes east, offers dramatic canyon walking with swimming holes along the way. The Grotte de la Devèze, just outside town, is a spectacular show cave with unusual aragonite formations. For something quieter, the roads north toward the Monts de l'Espinouse climb through chestnut forests to high moorland with wide views.

The Michelin Guide Vert gives St-Pons no stars, which seems unjust for a town with this much charm in this beautiful a setting. But then, the lack of recognition is part of the appeal — you will not be fighting crowds here.
