St-Pons-de-Thomières is a small town but it packs in more than its size suggests: a genuinely significant cathedral, an underrated regional museum, a vibrant Saturday market, and immediate access to the Haut-Languedoc park with its gorges and caves. You can spend a day here very pleasantly without running out of things to see.
