Toulouse is serious about food. The local speciality is cassoulet — a slow-cooked casserole of white beans, confit duck, Toulouse sausage, and sometimes lamb — found in brasseries throughout the city. The Marché Victor Hugo (covered market, closed Mondays) has exceptional produce, charcuterie, and cheese; the café-restaurants on the upper floor are a local institution for lunch. St-Cyprien, on the west bank of the Garonne, has a cluster of relaxed restaurants including Caffe Luce at 8 Place de l'Estrapade, a good Italian spot with a pleasant terrace. The Gascon culinary tradition — duck confit, foie gras, Armagnac — features prominently throughout the city.
