Bigot is the most established chocolatier in Tours, founded in 1913 and run as a family business ever since. The tea-room next door is an old-school institution — marble tables, ladies of a certain age, hot chocolate served properly in a porcelain pot.

The signature confection is the Macaron de Cormery, a small almond biscuit from a recipe the family claims goes back to a Cormery abbey monk in 791. It is dense, chewy, and quite different from the Parisian macaron most people picture. Buy a tin to take away; sit in the tea-room for the chocolate.
