Aix takes its food seriously without taking itself too seriously. The classic Provencal flavours are everywhere — olive oil, garlic, anchovies, basil, lamb — and the city has a long-standing tradition of inviting some of France's better chefs to cook in its restored mansions. Calissons, the local sweet of crystallised melon and almond paste shaped like a tiny boat, are sold in every patisserie window.
