Perugia's Academy of Fine Arts has a compact collection that is more interesting than its size suggests. The plaster casts include famous ancient and Renaissance sculptures, from the Dying Gaul to Michelangelo's Prisoners, and the pinacoteca adds works from the academy's own long history.
It is a good stop if you already like art museums or want a quieter counterpoint to the larger Galleria Nazionale dell'Umbria. The casts are especially useful for seeing how artists studied form before photography made reference images easy.
