Tivoli is Cortina's most decorated restaurant, holding a Michelin star and considered by many to be the best kitchen in the Dolomites. Chef Graziano Prest serves a cuisine rooted in the Cadore and Ampezzo traditions — casunziei, game, mountain herbs, alpine dairy — elevated without becoming unrecognisable. The wine list is serious, with excellent Alto Adige whites and Veneto reds. The room is warm and unpretentious for a restaurant at this level: wooden beams, candlelight, a view toward the mountains. Booking is essential in high season; the tasting menu gives the best sense of what the kitchen can do. Expect to spend €100 or more per person.
