Noord-Brabant has plenty to fill a day out from Eindhoven. The Efteling in Kaatsheuvel is one of the best theme parks in Europe, built around fairy tales and dark rides. Safari Park Beekse Bergen in Hilvarenbeek lets you drive or walk among free-roaming animals. For something quieter, the village of Nuenen, just east of Eindhoven, is where Van Gogh lived and painted in 1883-1885; a signposted walking route connects the locations from his work.
